Say I have a player with SA DEF
with my 5 UE points if I put Hei on him, I'm assuming this overrides his Def SA??
And would I need to specify which position I want to play him

Yes the SA Def would no longer apply. I then think he becomes the position he is best in.

You get to choose what he stays as by informing UE.
