Here's some ideas:
Acrobat: acrobatic shot stopper
Commanding - takes control of crosses and commands the back line
Penalty expert - expert at penalty saves
Presence - big character who could make a striker doubt themselves in a one on one
Close control - happy to have the ball at feet and good distribution

Interesting some have actually invested existing SA's to GK's when they serve no use whatsoever.
I would suggest the following four options.
Quick Counter Attack (QCA) - will look to launch an attack the moment he has the ball in his hands.
Catcher (CAT) - Deals well with crosses into the box
Agility (AGI) - A great shot stopper, great making point-blank saves
Glue (GLU) - Hands like glue, deals well with long range shots

In the legends game defenders seem to struggle against tm/cf's with great heading or height if they do not posses height theirselves or 10* kinda stat. this would balance the playing field, perhaps though this could be an 8 ue point addition, similar to leadership?

I found that adding SA DET made a huge difference to my GK's and if truth be told Rotherham wouldn't have got promoted if the GK's form didn't improve as much as it did from the week the SA DET was added.

I love the idea. GK's with a high PV are hard to get as teams won't part with them.
I like the SA's suggested and would add Communication. A GK who is vocal from the back and organizes and also Penalty Specialist who is a good shot stopper at peno's and has the ability to put off takers and to guess the correct way to dive.
I would like to be able to pay to improve the stats too.
Any thoughts?

Just my opinion Matthew but I would only add DET to LB/RB, AM, CF or TM I'm sure you can see the link there. Any other position including GK in my own opinion is a waste with minimal benefit to be had.
